Molto Kitchen Takeover!
Molto has been operating the past 6 months with a spread of cheese and small goods to pair with our ever changing wine selection. Over the months we have been working hard back of house to be able to present to you an offering that is sure to delight!
We are proud to say Chef Ryan Dolan will be taking over the Molto kitchen for four weekends starting Friday April 14th.
Ryan Dolan's career spans 16 years, beginning in his hometown of Cairns. He then spent time in some of Australia's best restaurants like Becasse and Pier before venturing overseas to France. Here he fell in love with the city of Lyon and its vibrant food and wine culture.
After 6 years, honing his skills in Michelin starred restaurants he returned home to Australia. He landed in Melbourne and started doing stints at highly regarded restaurants such as Amaru, Igni and Ramblr. He then took up residency at the Broadsheet Kitchen showcasing his neo-bistro concept Cabale.
In 2020, an opportunity arose to work at the Port Cygnet Cannery where the ideology of farm to table resonated with him and the quality of fresh seasonal produce was reminiscent to that of France.
Ryan's love for wine and quality seasonal produce is what sparked the collaboration for this takeover.
